Honey Cake (Ma Broon’s)

One of the Surfers found a copy of “The Broons’ Burns Night” in her local Charity Shop (Lifeline) and tried one of the recipes. This has proved so successful that we have decided to share it!

Honey Cake –

250g (8oz) Plain Flour,
1 tsp. Cinnamon
½ tsp.Mixed Spice
½ tsp.Bicarbonate of Soda
125g (4oz.) Butter
125g (4oz.) Brown Sugar
1 Egg (separated)
125g (4oz.) Honey
Milk to mix
A little Caster Sugar.

Preheat the Oven to Gas Mark 4, 175C, 350F. Sieve the flour, spices and bicarbonate together. Cream the butter and brown sugar and beat in the egg yolk. Add the Honey to this mixture. Fold in the dry ingredients gradually and gently, adding milk if the mixture is too thick. Whisk the egg-white until stiff and fold gently into the mixture.

Grease or line a loaf tin and pour in the mixture evenly. Sprinkle the top with a little caster sugar so that the cake has a slightly crunchy surface. Bake for approximately 30minutes then test with a skewer.

Dredge with more caster sugar when baked.

(Margaret found that measuring the honey and separating (and whisking) the egg white beforehand made the process easier. She also found she needed 4 tbspns of milk to thin the mixture).
