Clarissa Dickson Wright – Chocolate Cake

Clarissa Dickson Wright – The Surfers have ‘found’ what was referred to as a ‘trade secret’ which she apparently said convinced the students at Aberdeen University to elect her as their Rector. It sounds scrumptious so why not give it a try –

250g unsalted butter,
300g plain chocolate,
5 eggs (separated),
25g caster sugar,
25g plain flour,
1 tspn baking powder.

– Melt the butter and chocolate together, either over boiling water or in a microwave, add the egg yolks, flour, sugar and baking powder and mix well together. Whip the egg whites until very stiff and fold into the mixture with a metal spoon, using a figure of eight movement.

Line and grease a spring-loaded baking tin and pour in the mixture. Bake at 125 degrees for 45 minutes, or until the skewer comes clean. Turn out, leave for 5 minutes, peel off the paper and top with a chocolate ganache icing.
